Brown Butter Sweet Potato Doughnuts
Ingredients:
- 1 cup mashed sweet potatoes
- 2 tablespoons brown butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- Oil for frying
- Powdered sugar for dusting optional
Instructions:
Brown butter and mashed sweet potatoes should be combined in a mixing bowl
Mix in the brown sugar and granulated sugar until thoroughly blended
Blend the mixture until it becomes smooth by adding the eggs and vanilla extract
Mix the flour, baking soda, baking powder, ground nutmeg, ground cinnamon, and salt in a different bowl
Add the dry ingredients to the sweet potato mixture gradually, starting and ending with the dry ingredients and alternating with buttermilk
Blend until barely combined
Heat the oil in a deep fryer or large saucepan to a temperature of 175C 350F
Drop heaps of the doughnut batter into the heated oil, and cook in batches for two to three minutes on each side, or until thoroughly cooked and golden brown
Using a slotted spoon, remove the doughnuts and put them on a plate covered with paper towels to remove any excess oil
While the doughnuts are still warm, sprinkle them with powdered sugar, if desired
