Grilled Chicken & Summer Veg



This dish of grilled chicken and summer vegetables has just the right amount of each flavor and texture. The chicken breasts are juicy and full of flavor, and the grilled vegetables give them a great sweet smokey flavor. This dish is easy to make and tastes great. It's great for summer parties or dinners during the week.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 zucchinis, sliced lengthwise
  • 2 yellow squash, sliced lengthwise
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

Preheat grill to medium-high heat

In a small bowl, mix olive oil, minced garlic, oregano, basil, salt, and pepper

Brush chicken breasts and vegetables with olive oil mixture

Grill chicken for 6-7 minutes per side or until cooked through, and grill vegetables for 3-4 minutes per side or until tender

Remove chicken and vegetables from grill and let rest for a few minutes before serving

Serve grilled chicken with summer vegetables and enjoy!
