Vegan Salted Caramel Shortbread Cookies



Indulge in the rich flavors of buttery shortbread combined with luscious vegan caramel and a hint of sea salt.

Ingredients:

  • 1 cup vegan butter
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup vegan caramel sauce
  • 1/2 teaspoon sea salt flakes

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, cream the vegan butter and powdered sugar until smooth and creamy

Gradually add in the flour and mix until a dough forms

Roll out the dough on a lightly floured surface to about 1/4 inch thickness

Use a cookie cutter to cut out shapes and place them on the prepared baking sheet

Bake for 12-15 minutes or until the edges are lightly golden

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely

Once cooled, drizzle the vegan caramel sauce over the cookies and sprinkle with sea salt flakes

Allow the caramel to set before serving
