Forty Cloves Garlic Chicken



Forty Cloves Garlic Chicken is a classic French dish known for its rich garlic flavor and tender chicken. This recipe features succulent chicken thighs roasted with an abundance of garlic cloves until they're golden brown and fragrant. The combination of white wine, chicken broth, and thyme creates a delicious pan sauce that elevates the dish to perfection.

Ingredients:

  • 8 chicken thighs, bone-in and skin-on
  • 40 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper to taste

Instructions:

Preheat oven to 375F 190C

Season chicken thighs with salt and pepper on both sides

In a large ovenproof skillet, heat olive oil over medium-high heat

Add chicken thighs to the skillet, skin side down, and cook until golden brown, about 5 minutes per side

Remove from skillet and set aside

In the same skillet, add garlic cloves and cook for 2-3 minutes until lightly browned

Deglaze the skillet with white wine, scraping up any browned bits from the bottom

Add chicken broth and thyme leaves, stirring to combine

Return the chicken thighs to the skillet, nestling them among the garlic cloves

Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and the garlic is soft and caramelized

Serve hot, spooning garlic and pan juices over the chicken
